EVCO is extracted from fresh coconut milk using a cold-processing method and left unrefined. The coconuts are shredded in this situation, and coconut milk is obtained by crushing the coconut meat. The coconut milk is further refined in a centrifuge system to preserve the most pure type of coconut oil. The milk is further divided into water and oil due to the high spinning speed. The milk is processed several times to obtain clear oil, and since no heat is used in the process, the oil's natural constituents, fragrance, and antioxidants are preserved. Copra, a dried coconut kernel, is used to make ordinary coconut oil. The copra is pressed, and the extracted oil is refined, decolorized, and bleached to make it fit for use, although not all of the natural values are extracted.
